Mussaman Curry (Gaeng Mussaman)
Mussaman Curry (or Muslim Curry) is the unique type of Thai curries because it tends to use dried spices for seasonings like the Indian curry. It is an appetizing dish made from abundant ingredients including coconut milk, roasted peanuts, potatoes, palm sugar, cinnamon, bay leaves, tamarind sauce, fish sauce and a mixed combination of different exotic spices.
There are a lot of choices of meats, often beef, chicken, pork and mutton. Chicken is the most popular in Mussaman curry but pork is usually used among Buddhists people and in Thailand, beef, mutton and lamb are more common. This curry dish is rather mild because the hot taste of chilies is mellowed thanks to coconut milk, dried spices, peanuts, potatoes and onions. Roasted peanuts are added to create a crunchy and tasty effect while potatoes help thicken the curry.
Widely considered as the “King of Curries”, Mussaman Curry is a very sophisticated and time-consuming cuisine to prepare. As a result, it offers a perfect combination, plentiful spicy, with a rich coconut, savory, sweet and sour combination of premium flavors which make all the thoughtful preparation worth waiting for. Let’s enjoy this fragrant curry in a cold day with a loaf of bread and a glass of Bordeaux wine.
